Merry created this fruit and vegetable birthday cake for Rosie's second birthday. She used items that were in her refrigerator so the actual ingredients can be based on whatever you have in your refrigerator. Rosie gobbled it up quickly go it has to be good! A treat for a birthday or any "special" day. Thanks, Merry, for sharing your recipe.

Merry's Birthday Cake

My darling little Rose had her second birthday recently. I can't believe it's already been so long! We had a little party for her so I made her 'cake' out of various fruits and veggies. She and the girls stuffed themselves silly and were lounging around the cage. Let's see if I can remember everything I put in it ... blended cantaloupe, apples, and carrots topped with celery and 'iced' with parsley. I added two carrot 'candles'. It's what we had in the fridge. I strained the blend before molding it because it was really watery. The pigs liked it!

UPDATE: 4-14-07 I thought you might enjoy these pictures of Shakira's fourth birthday party. I did something a little different for the cake this time. Instead of using a blender, I used a food processor to simply chop up the veggies (rather than grind up and strain them). This made up half of the mixture for the cake, and the other half was dry instant oatmeal. I added a little water to make it moldable, and it stuck together better than any cake I've made. The girls really enjoyed it too. I didn't have any leftovers with this one!
